Beginner recipe

Simple Homemade Butter

About 15 minutes

What you need

  • 2 cups very cold heavy cream
  • Fine salt, to taste
  • Ice water

How to make it

  1. Beat the very cold cream past the whipped-cream stage until the butter separates from the liquid.
  2. Drain the liquid, then press and rinse the butter in ice water until the water stays clear.
  3. Work in salt a little at a time, tasting as you go. Press into a round puck, cover, and refrigerate.

Keep refrigerated. Use clean utensils and discard if the butter develops an unusual odor, color, or mold.

From liquid to gold

Butter basics,
step by step.

No wooden churn required. A stand mixer, food processor, or tightly sealed jar will all get you there.

  1. 01

    Start with cream

Start with very cold heavy cream straight from the refrigerator. Pour it into a clean mixing bowl.

  2. 02

    Churn past whipped

Beat until the cream turns grainy, then suddenly separates into golden butterfat and cloudy buttermilk.

  3. 03

    Wash it cold

Press and fold the butter in ice water until the water runs clear. This is what gives it a clean flavor and longer life.

  4. 04

    Season & shape

Add a little salt if you like, tasting as you go. Shape the butter, cover, and refrigerate.

“
Don’t rush the wash. Any buttermilk left behind shortens the butter’s life—and muddies its sweet, clean finish.

— The maker’s golden rule

Keep it well

Wrapped tight,
enjoyed fresh.

Refrigerate for up to two weeks, or freeze well-wrapped for three months. Let it soften for ten minutes before serving.
